Our Humble Beginning
Welcome to GH Tavern!
GH Tavern’s journey began in 2001 when Christian Gombos founded a landscape design center and nursery through his company, Laurel Land Design. Partnering with longtime friend and business associate Glenn Staubley, the duo transformed the property into a flourishing garden center that served Burlington, Harwinton, and the surrounding communities for many years.
When the economy took a downturn in 2009, they sought new opportunities, leading to their first venture into the food industry with an ice cream shop, The Frozen Gnome. The success of this seasonal attraction inspired the launch of the Greenhouse Café shortly after. As both establishments grew in popularity, the vision expanded to create a year-round indoor tavern with a full bar and ample outdoor seating. With the motto “Open Air, Local Fare,” GH Tavern continued to evolve, enjoying steady growth in both sales and community support.
GH Tavern’s welcoming atmosphere is also shaped by its incredible team of employees, many of whom have become dear friends. Their passion and dedication create a warm and inviting experience for every guest.
The challenges brought by the COVID-19 pandemic led to creative adaptations. In 2020, a tent was set up to accommodate visitors, followed by the establishment of a greenhouse that not only served the garden center but also supplied fresh, homegrown produce to the thriving café. Over time, the greenhouse evolved into a seasonal attraction, featuring everything from hanging baskets and pumpkins to a magical winter wonderland, where Santa brunches and dinners delight guests during the holiday season.
Today, GH Tavern has become a sought-after destination, drawing visitors from near and far to enjoy its unique seasonal offerings. Guests are invited to explore the calendar of events and experience the exceptional dining and community celebrations that make GH Tavern a special place.
